START UP A MOBILE ICE CREAM BUSINESS |
STEP1. PLANNING |
|
|
Imaginative ice creams continued
Being able to offer a wider selection of ice cream products shouldn't be
much of a problem. After all, you already have the main equipment and freezers
needed to sell regular ice creams and ices nor should the fact that you sell
hard scoop or soft ice cream make any difference or limit the range of products
you can sell. |
|
If a function organiser contacts you and says
"I have 200 guests coming to a party that I am holding and I'm looking for a
specialist ice cream seller to serve knickerbocker glories as a special treat"
you really want to avoid turning around and saying "I'm sorry we only sell
ninety nines" simply through lack of imagination. Even at only £2.00 per head
you would be turning away £400 pound worth of extra turnover and a good £250
plus of possible profit. Those seven words are so easy to say but just lost you
good additional income. |
|
Let's look at the knickerbocker glory. What
items will you need extra to produce them? 1. Tall glasses and spoons, so hire
glass or buy plastic or disposable ones. 2. Fruit, use fresh or buy large
caterers tinned fruit cocktail from your cash and carry. 3. Whipped cream, use
caterers spay cans or make fresh. 4.Toppings, wafer, chopped nuts and flavoured
syrups from your supplier. 5. Paper serviettes or napkins, available from all
disposable product suppliers and cash and carry's. |

BASIC KNICKERBOCKER GLORY |
The knickerbocker glory
Is a very elaborate ice cream sundae and contains ice cream, jelly, custard,
fruit and cream. Layers of these different sweet tastes are alternated in a tall
glass and are topped with all kinds of syrup, nuts and whipped cream. The recipe
below is generalised and can be changed to different ice cream flavours, fruits,
etc to suit your requirements. |
Basic Knickerbocker Glory Ingredients
Vanilla ice cream, hard scoop or soft ice cream. Fresh fruit, such as
strawberries and raspberries or use canned fruit, such as mixed fruit cocktail.
Custard, caterers made or packet mix. One or more fruit flavours of sweetened
jelly dessert. Chocolate syrup or other fruit syrups, such as strawberry, also
can be used. Whipped cream in spray can or from whipped cream machine. Chopped
nuts, such as walnuts. A topper, such as a wafer. |
Preparation method
First do your advance preparation work. Make jelly and custard, chill thoroughly
until set, wash and cut up fresh fruits into small, bite-sized pieces and chill
if using fresh. Open if you are using tinned fruit cocktail and drain the syrup.
Set up work area by placing knickerbocker glory glasses (tall sundae glasses) on
counter. You'll need a scoop for the ice cream and some spoons to handle the
fruits and jelly. Place alternating layers of ice cream, fruit, jelly in the
glasses up to the very top. Spray the whipped cream on top of each sundae to
desired height. Sprinkle with a variety of chopped nuts or preferred toppings.
Finaly add a wafer or biscuit to the top. |
History of the name
First described in the 1930s a knickerbocker was a descendant of the
original American settlers from Holland. The name comes from the fictional
Diedrich Knickerbocker, who wrote Washington Irving's History of New York.
Knickerbockers are also old-time knee-length men's pants that are rarely seen on
golfers. How the name is connected to the sundae is unknown. |
